I know it’s been awhile since I shared a smoothie bowl with you. I thought I’d give you a break and let you know I eat more than just my smoothie bowls.

You really didn’t think that’s all I ate, did you? For those of you who answered yes, well, you’re partly correct.

You see since I’ve made smoothie bowls, that’s all I’ve been eating for breakfast these days, especially this Grapefruit Smoothie Bowl with Cranberry Nice Cream.

Filled with an abundance of citrus juices like Blood Orange and lime, along with the grapefruit.

And I love to add some of my Cranberry Nice Cream for more antioxidants, flavor, and a burst of color.

You’re really getting two recipes for one as the Cranberry Nice Cream can be enjoyed by itself in the upcoming hot days of summer.

Grapefruit Smoothie Bowl with Cranberry Nice Cream

Wake up your mornings with this Grapefruit Smoothie Bowl with Cranberry Nice Cream. A delicious way to get your daily dose of antioxidants and vitamin C.

Ingredients

    For Grapefruit Smoothie Bowl:
  • Juice of:
  • -2 Grapefruits
  • -1 Blood orange
  • -1 Lime
  • 1 and 1/2 cups unsweetened coconut milk
  • 1 banana, sliced
  • 4 Tablespoons vanilla protein powder (1 scoop)
  • 1/4 cup uncooked oats
  • 3 Tablespoons coconut oil, melted
  • 5 teaspoons ground flaxseed
  • 3 to 6 Tablespoons chia seeds
    For Cranberry Nice Cream:
  • 1/3 cup unsweetened coconut milk
  • 1 banana, sliced
  • 4 Tablespoons vanilla protein powder (1 scoop)
  • 1 and 3/4 cup frozen cranberries

Instructions

    To make Grapefruit Smoothie Bowl:
  1. Add all ingredients, EXCEPT for the chia seeds, into a high speed blender.
  2. Blend on High speed until all ingredients are mixed together and pureed.
  3. Add 2 Tablespoons of chia seeds and pulse for 1 to 2 seconds, just enough to mix them with the other ingredients.
  4. Pour into a bowl.
  5. Stir in 2 to 4 more Tablespoons of chia seeds with smoothie, depending how thick you want it.
  6. Cover and chill for at least 4 hours or overnight so mixture can thicken up.
  7. Serve with Cranberry Nice Cream.
    To make Cranberry Nice Cream:
  1. Add coconut milk, banana, and protein powder into high speed blender.
  2. Blend on medium speed to mix together.
  3. Pour in frozen cranberries to desired thickness. You can add more frozen cranberries for a thicker nice cream. If you want thinner nice cream, less frozen cranberries or more coconut milk.
  4. Blend on High until cranberry nice cream is smooth.
    To prepare Grapefruit Smoothie Bowl with Cranberry Nice Cream:
  1. Add Cranberry Nice Cream to Grapefruit Smoothie Bowl.
  2. Top with your choice of flaked, unsweetened coconut, macadamia nuts, grapefruit or blood orange slices, fresh raspberries, cranberries, blueberries, or strawberries, kiwi slices, dried fruit or nuts, chia seeds, or Muesli.
  3. Enjoy!
  4. *If making Grapefruit Smoothie Bowl for the next morning, pour into an airtight container and place lid on top. Put into refrigerator to chill. In the morning, scoop into a bowl and top with desired ingredients in the morning before serving.

Notes

- If you have remaining Cranberry Nice Cream, place into a freezer-proof dish and freeze remaining nice cream. When ready to serve, let sit at room temperature for an hour to soften before scooping out.
