Watermelon Mint Popsicles

If you live in the Midwest or South, you know it’s been hot!

Actually, hot is an understatement. It’s been unbearably, inhumanely, HOT, HOT, HOT!!!

I heard it got to 110F degrees in Kansas!

Is anybody else, besides me, looking forward to the cooler days of Fall? I know we can’t just wish Fall here, so we have to do what we gotta do to stay cool in this summer heat.

And I have just the thing for it this week, Watermelon Mint Popsicles.

It reminds me of a York Peppermint Patty commercial where you take one bite and the cool winter hits ya!

Except these popsicles have all the sweet flavors of summer, watermelon mixed with cool fresh mint.

Just like my other popsicle recipes, these are dye-free, gluten-free, refined sugar-free, paleo and diabetic friendly because they’re made with natural ingredients from Mother Nature.

Speaking of Mother Nature, if you’re using fresh mint from your garden, be sure to wash first before using in this recipe. I always rinse the mint in fresh running water and then fill my sink with enough water to cover the mint. Add one teaspoon of white vinegar and let the mint sprigs soak for about ten minutes. This helps to kill any bugs on the mint that you cannot see and anything else that might have been poured on your mint by the kids. And don’t worry, your mint will not taste like vinegar.

Watermelon Mint Popsicles

These Watermelon Mint Popsicles are sure to cool you off this summer. And only two ingredients used to make these easy, frozen treats that you and your family are sure to enjoy! Refined sugar-free, dye-free, gluten-free, vegan, paleo, and diabetic-friendly.

Ingredients

  • 2 and 1/2 cups seedless watermelon, diced
  • 3 sprigs of fresh mint

Instructions

  1. Add watermelon and 2 of the mint sprigs into a blender. Pulse on High until pureed.
  2. Pour into popsicle molds. You can put 1 or 2 whole mint leaves into the molds (like I did) if you like. Place tops with popsicle stick on top.
  3. Place into freezer in upright position for at least 4 hours.
  4. To remove popsicles, let sit out on counter for about 5 to 10 minutes or turn upside down and run warm water over molds for a minute. Gently remove popsicles and enjoy!
