Healthy Fudgesicles

These fudgesicles will help you keep your cool this summer while still being healthy for you! Made with coconut milk, avocado or banana, Medjool dates and honey these fudgesicles will help you get beach ready!

It might not be summer yet (June 20th at 6:34 p.m. Is the official welcome of summer), but it has been hot!

This week here in Georgia we have been seeing the high 90’s. This was today’s temperature on my porch…Ugh!

I know that doesn’t sound hot to y’all on the west coast, but we have this little thing here in the South called humidity, which amps up the degrees, making 90 feel like it’s 100 plus.

The air is thick and you literally feel like you’ve opened the door to your home and walked straight into a steam sauna.

So you can see my need to try and stay cool this summer. Which is why I plan on sharing many frozen treat recipes with you this summer, starting today with my Avocado fudgesicles and Banana fudgesicles.

These fudgesicles remind me of summer when I was a kid. I remember my mom bringing home fudgesicles and we would eat them outside by the pool, trying to finish them before they melted all over our hands. All that creamy, chocolatey goodness.

Believe it or not, I haven’t had a fudgesicle since. Blame it on healthy eating and such, but I really haven’t.

Shame on me, I know.

Until now, because I made these fudgesicles to fit into my healthy eating.

I made them with avocados and bananas, separately of course, and coconut milk.

The ingredients are listed separately, one for the Avocado Fudgesicles and the other for the Banana Fudgesicles, but I’ve listed only one set of instructions because they’re both made the same way.

Even though both recipes are delicious, I have to say I prefer the avocado fudgesicles over the banana fudgesicles because they’re creamier and remind me of the ones I ate when I was a kid.

But I’ll let y’all be the judge, which is why I’m sharing both recipes with you today.

So raise your fudgesicles and let’s all feel like kids again, if only for a short time.

A healthy alternative to fudgesicles, these fudgesicles get their creaminess from coconut milk with their sweetness coming from Medjool dates and honey. For the Avocado fugesicles, avocados add a little more creaminess to them. While the bananas add a sweeter note to the Banana fudgesicles.

Ingredients

For Avocado Fudgesicles:
  • 1 ripe avocado
  • 1 can (13.66 ounces) coconut milk
  • 3 Tablespoons unsweetened cocoa powder
  • 8 Medjool dates, softened and diced
  • 2 teaspoons water – to heat dates in
  • 3 teaspoons honey
  • 1 teaspoon vanilla extract
For Banana Fudgesicles:
  • 1 cup ripe bananas
  • 1 can (13.66 ounces) coconut milk
  • 3 Tablespoons unsweetened cocoa powder
  • 1 Tablespoon honey
  • 6 Medjool dates, softened and diced
  • 2 teaspoons water – to heat dates in

Instructions

For both Avocado & Banana Fudgesicles:
  1. Add whole dates and 2 teaspoons of water into a small bowl. Heat in microwave for 1 minute. Let cool. After dates have cooled, remove seed and dice.
  2. Add dates plus water used to heat them up, and remaining ingredients into a high speed blender. Pulse on High until all ingredients are pureed.
  3. Spoon into ice pop containers, place into freezer and freeze for at least 4 hours. They taste best if given 24 hours for the flavors to combine.

Notes

  • To remove fudgesicles from containers, either leave out at room temperature for 1 to 2 minutes or run cool water over bottoms of popsicle containers to help loosen them up.
